Adding trees to a steep slope for privacy?

We live in San Diego and have a huge slope that leads up to our neighbors home. They are very nosy and we are interested in building some privacy in our yard so we can enjoy it more without worrying about them looking down. We are considering trees on the slope but don't want to be obvious. Any suggestions on trees/shrubs that grow quickly and can provide shade/privacy?
